Almond Cake


Extremely moist almond cake with powdered sugar and almonds on top. Perfect weekend treat.


INGREDIENTS

  • 270 g plain flour

  • 180 g white sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 250 ml plant milk

  • 2 tsp lemon juice

  • 150 g plant butter (melted)

  • 1 tsp orange food colour

  • 1 tbsp almond essence



INSTRUCTIONS


1. Pre-heat the oven to 180°C.


2. Add all the wet ingredients to a jug (plant milk, lemon juice, orange food colour and almond essence), set aside.


3. Add the dry ingredients to a big mixing bowl (flour, sugar, BP and BS), whisk it to make sure there aren't any lumps.


4. Add the wet mixture to the dry and mix together until well combined. Pour the cake batter into a loaf tin and tap it a few times to get rid of air bubbles.


5. Bake the cake for 1 hour, make sure you check on it every 10 mins for the last 20 mins of baking by using a toothpick. If the cake isn't fully cooked but it's starting to turn brown, add foil on top of it and continue cooking until it's done.


6. When the cake is done make sure it rests for a bit before starting to cut into it. Enjoy!🌝
