Banana & Granola Butter Muffins


Vegan Cinnamon & Rice Puff Bars
These banana and granola butter muffins are the perfect weekend treat. If you haven't tried granola butter yet, you definitely need to because it is amazing. These babies are ready in less than 30 minutes. Let's get baking!


Prep-time: 5 minutes

Baking time: 20-25 minutes

Servings: 6-8 muffins



INGREDIENTS

  • 150g light brown sugar

  • 3 tbsp vanilla essence

  • 70 ml oil

  • 250 ml water

  • 220g plain flour

  • 2 tsp baking powder

  • 2 flax eggs

  • 2 ripe bananas

  • granola butter (I used the chocolate granola butter from Oat Avenue)






INSTRUCTIONS

1. Pre-heat oven to 180 degrees.


2. Add all the ingredients to a large mixing bowl (apart from the granola butter) and mix until fully incorporated.


3. Add the mixture to your muffin tins, then add 1 tsp granola butter into each muffin and give it a little swirl using the end of a teaspoon.


4. Bake the muffins for 20-25 minutes and voila, delicious muffins ready to devour.
