An easy and delicious creamy Coconut & Cauliflower Soup recipe that can be made in just one pot. Topped with baked cauliflower and coconut milk. Perfect comfort dish for the cold January evenings.

Servings: 4 portions
INGREDIENTS
1 medium cauliflower (chopped into chunks)
1 onion (chopped into chunks)
1 big potato (chopped into chunks)
1 tbsp curry powder (add more if needed)
1 tin coconut milk
3 cups water
1 vegetable stock cube
1 cup baked cauliflower florets (optional topping)
1 tsp salt
1 tsp pepper
INSTRUCTIONS
1. Add all the ingredients (apart from the coconut milk) to a large pot, and simmer for 15-20 minutes or until the vegetables are soft.
2. Add most of the coconut milk to the soup and blend until completely smooth.
3. Top the soup with cauliflower florets, coconut milk, salt and pepper to taste, and a sprinkle of curry powder. Enjoy with your favorite bread.
