Fudgy Pumpkin Cake

Vegan Cinnamon & Rice Puff Bars
This fudgy pumpkin cake is the perfect autumn dessert, it's bursting with flavors of cinnamon, ginger, and nutmeg and did I mention that it's incredibly easy to make?

Prep-time: 5 minutes

Baking time: 50-60 minutes

Servings: 1 cake


  • 220g plain flour

  • 1 cup brown sugar + 1/2 white sugar

  • 1 tsp vanilla sugar

  • 1 tsp baking powder

  • 1 cup plain oil

  • 2 flax eggs

  • 1 tin pumpkin puree

  • Handful of mixed nuts (for topping, optional)


  • 1 tsp cinnamon

  • 1 tsp ginger

  • 1/2 tsp nutmeg

  • 1/2 tsp salt


  • 1 cup icing sugar

  • 1 tbsp water


1. Pre-heat oven to 180 degrees.

2. Add all the ingredients to a large mixing bowl and mix until fully incorporated.

3. Add the mixture to a lined baking tray, and tap it a few times, to get rid of air bubbles.

4. Bake the bake for 50-60 minutes, add foil to the top of the cake if it starts to get too dark.

5. When the cake has cooled down, add icing and nuts on top and enjoy!
