Incredibly fudgy and mouth-watering Vegan Brownie Cookies. They are so incredibly easy to make and they're ready in less than 20 minutes!
INGREDIENTS
120 g dark chocolate
50 ml sunflower oil
150 g white sugar
1/2 tsp salt
80 ml water
130 g plain flour
20 g cocoa powder (add more if you want a richer chocolate taste)
1 tsp baking powder
1 tsp instant coffee (optional but recommended)
INSTRUCTIONS
1. Pre-heat the oven to 180°C.
2. Add chocolate and oil to a bain-marie and mix until smooth, set aside.
3. In a bigger bowl, add sugar and hot water and mix until the sugar is fully dissolved.
4. Now add the chocolate from step one to the big bowl and mix well. The mixture should be warm when you're working with it. If it gets cold it won't give the same 'crackle' effect on top of the cookie.
5. Add the remaining ingredients and mix together.
6. Add the dough to the baking tray as best as you can. I used 1/4 cup as a cookie scooper and that worked very well.
7. Bake the cookies for 8 minutes at 180°C degrees and enjoy!🍪
Tip:
If you want a more rich cookie, I recommend adding coffee to the recipe. Simply add the instant coffee to the warm water before adding it to the cookie dough.
I also tried adding orange extract to this and it was DIVINE, so if you want to spice up the recipe add 1 tbsp orange extract.
