VEGAN KING CHARLES CORONATION CAKE
INGREDIENTS
440g plain flour
350g white sugar
2-3 tbsp vanilla extract
2 tsp baking powder
480ml soy milk
2 tbsp vinegar (apple cider vinegar or white wine vinegar)
170ml plain oil
1/4 cup D&Ds (Link)
A handful Chocolate Ballers
Icing:
4 tbsp icing sugar + 1-2 tbsp water
INSTRUCTIONS
Begin by combining the wet ingredients (soy milk, vinegar, vanilla and oil) in a jug, and whisk for 10 seconds. Set aside for 5 minutes.
Add the remaining ingredients to a large bowl (flour, sugar and baking powder), followed by the wet mixture and the D&Ds, mix until thoroughly combined.
Add oil to a bundt cake pan, make sure it's coated completely.
Preheat your oven to 180°C (356°F)
Bake the cake in the preheated oven for 1 hour, or until a toothpick comes out clean.
Allow the cake to cool completely before adding any toppings. Enjoy!
