This Vegan Spicy Tomato & Lentil Soup is easy, comforting, and it's bursting with flavors. It's also got a nice kick to it. It's perfect for those cold autumn nights.
Serves: 4 portions | Prep-time: 5 minutes | Cooking time: 55-65 minutes
INGREDIENTS
2 onions (chopped in half)
1kg tomatoes (chopped in half)
3 garlic cloves
3 tbsp olive oil
1 cup oat milk
500 ml vegetable stock
150 g red lentils
1/2 cup of basil
2-3 tsp cayenne
salt and pepper (to taste)
INSTRUCTIONS
1. Pre-heat oven to 180C degrees.
2. Cut tomatoes and onions in half and add them to a baking tray, add garlic cloves, and drizzle with olive oil. Add salt and pepper and bake them in the oven for 55-65 minutes.
3. Add the cooked vegetables to a large pot. Then add stock, cooked lentils, thyme, oat milk, and basil, and blend it all together.
4. Enjoy with basil and a drizzle of olive oil on top. If you want to treat yourself even more you can make a homemade garlic bread
