Carrot & Ginger Soup | Anti-Inflammatory | Healthy Vegan Soup

Carrot & Ginger Soup


INGREDIENTS

  • 400g carrots

  • 160g red lentils

  • 130ml plant milk

  • 1 litre water

  • 1 vegetable stock cube

  • 1 tsp cumin

  • 1 tsp chilli flakes

  • 1 tsp turmeric

  • 1 tbsp tomato paste

  • 2-3 tbsp ginger (grated)

  • 1-2 garlic cloves (minced)


INSTRUCTIONS

1. Heat cumin, chili flakes, turmeric, ginger, and garlic in a pan, heat them for a minute on low/medium heat.


2. Add carrots and tomato paste and heat for another minute. Add lentils, water, stock cube, milk, and stir together. Simmer for 15-20 minutes.


3. Blend the soup with a stick blender, add salt and pepper to taste and enjoy.


Tips

*Add more plant milk if the soup is too thick.

*Add cream, nutritional yeast and chili flakes on top if you want to spice it up.
