VEGAN CHOCOLATE BANANA BREAD RECIPE

Amount: 1 banana bread (7 servings)


INGREDIENTS

  • 200g plain flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 110g plant butter

  • 150g brown sugar

  • 2 crackd egg or flax eggs

  • 4 ripe bananas

  • 1/2 cup pecans

  • 1/3 cup cocoa powder

  • 1/4 cup chocolate chips



INSTRUCTIONS

1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Prepare a loaf tin by greasing it or lining it with parchment paper.


2. In a mixing bowl, combine the plain flour, baking powder, brown sugar, chopped pecans and salt. Mix well, set aside.


3. Add the mashed bananas to a jug or bowl, followed by the plant butter, vegan eggs. Mix until well combined. Then gradually add the dry ingredients (apart from the cocoa powder and chocolate) and mix until combined.


4. In a separate bowl, take half of the batter and mix in the cocoa powder and chocolate chips mix until fully incorporated. Begin layering the batters into the prepared loaf tin. Start by adding spoonfuls of the plain batter, then alternate with spoonfuls of the cocoa powder batter until all the batter is used up.


5. Use a knife or a skewer to gently swirl the batters together, creating a marbled effect. Sprinkle sugar on top and bake for 35-45 minutes.


6. Once baked, remove the banana bread from the oven and allow it to cool in the tin for about 10-15 minutes. Slice and enjoy your delicious Vegan Chocolate Banana Bread!
