VEGAN CHOCOLATE & PEPPERMINT CAKE

Vegan Chocolate & Cherry Christmas Tarts
Chocolate lovers, this one's for you. This decadent Vegan Chocolate & Peppermint Cake is incredibly fudgy and rich on the inside, coated in peppermint and chocolate ganache and topped with an icing sugar drizzle and crushed candy canes.

Prep-time: 10-15 mins

Baking-time: 20-40 mins (check recipe)

Servings: 1 cake




INGREDIENTS

Cake

  • 400ml oat milk

  • 1 tsp apple cider vinegar

  • 150ml vegetable oil

  • 250g white sugar

  • 220g plain flour

  • 90g cocoa powder

  • 1 tsp baking powder

  • 1 tbsp flax seeds (ground)


Chocolate Ganache

  • 300g chocolate

  • 1/2 cup oat milk

  • 1/2 tsp peppermint essence


Topping

  • 4 candy canes (crushed)

  • Icing drizzle (2 cups icing sugar + 3 tbsp cold water)



INSTRUCTIONS

1. Pre-heat oven to 180°C.


2. Start by mixing the wet ingredients together. Add oat milk, vinegar and oil to a jug and mix. Let it sit for 5 mins.


3. Then add the rest of the ingredients to a large bowl, and whisked until everything is fully mixed. Add the wet mixture and whisk until it's all combined.


4. Add the cake batter to a greased cake pan, tap it a few times and bake for 20 minutes. Please note that the baking time really depends on your cake pans/tins. I used 2 (20x20 cm) cake pans, If you are using a larger one, then the cake probably needs around 40-60 minutes. You can easily check whether it's done or not by putting a toothpick into the cake, and if it comes out clean it's ready.


5. When the cake has cooled down, add it to the fridge for 1 hour (or the freezer if you want it quicker haha).


6. While the cake is cooling you can make the ganache. Add chocolate and oat milk to a heat proof bowl, put it on top of a small saucepan with about 300ml water (water bath). Put it on medium heat and let it melt, this will take anywhere between 5 to 10 minutes.


7. Once the chocolate has melted, give it a stir. Then add the peppermint essence and stir until it's completely smooth. Set aside to cool down.


8. Add the ganache to the cold cake and spread it around using a dough scraper or spatula. Then add the icing sugar drizzle and top it with crushed candy canes. Enjoy :D
